Have you ever tasted fresh smoked tuna and wondered how to make it? Or have you wondered what to do with fresh tuna? It's great for tuna steaks on the grill, sushi, and tastes great when smoked! This is a delicacy from my home town in California, where we get albacore tuna.
My husband went fishing with our friends and caught some yellow fin tuna. I decided to try my hand at making smoked tuna and it turned out great! I've made it many times now and even smoked some for friends.
To start, I found an online video and decided to use the brine recipe but alter the cooking temperature and cooking time, in an attempt to re-create the smoked tuna I love from my childhood.
